I actually sat down on a Sunday and menu planned again! I went shopping on Friday, so I'm trying to include meals that use what I bought. Makes it more difficult this way and I wish I had thought my purchases through a bit more. It wasn't a 'full' shopping trip, just a stop at Trader Joe's where we don't always get to. So I just picked up what I knew I needed and some stuff of what I wanted. Shopping that way doesn't do well for the budget!
I'm working on planning out our breakfasts & lunches - so many days they are on a whim and we snack because there is no lunch. With just 3 of us, it is easy to make enough of a meal to have leftovers for at least 2 if not all 3 of us. Sometimes I have to make a point of putting the 'leftovers' aside before we start our meal so they don't get eaten! What we need to eat and what we want to eat don't always match up. It's a great way to take care of portion control when the seconds are already in the fridge!

Free for all for breakfast & lunch.
D: Salmon Patties, Green Beans & Fresh Bread
Monday:
B: Eggs, Toast & Orange Slices
L: Turkey Sandwiches, Carrot Sticks & Canned Peaches
D: Chana Masala & Naan Bread {recipe TBD, I have a few I'm looking at}
Tuesday:
B: Oatmeal & Grapefruit (*eggs for mom)
L: Leftover Chana Masala
D: Chicken Enchilada Casserole {SC} & Salad
Wednesday:
B: Egg Sandwhiches & Orange Slices
L: Leftover Chicken Enchilada Casserole & Cucumber Slices
D: Split Pea Soup {SC} & Biscuits {*almond bread for mom}
Thursday:
B: Yogurt w/ Blueberries & Muffins
L: Leftover Soup for Dad, Lunch @ Bob's Red Mill for Bug & Mom (field trip!)
D: Baked Chicken Nuggets & Green Beans
Friday:
B: Cream of Wheat & Canned Peaches (*eggs for mom)
L: Turkey Sandwiches, Carrot Sticks & Apple Slices
D: Pot Roast {SC}, Roasted Potatoes, Salad/Veggie & Blueberry Cobbler {made with Coconut Flour}
*I've added in some of the changes that I'll have on my mostly grain-free with minimal gluten-free carb diet that I'm currently following. If I haven't made note, assume that I'll be leaving off the bread/grains in the meal for myself.
